The sauce, which can be creamy, rich and dreamy, is packed with a lot of butter, Parmesan cheese and cream, coating all the noodles with ample cheesy flavor. Alfredo sauce is the best as it’s easy to prepare, and takes only a few ingredients and a few minutes. Serve over grilled chicken, grilled shrimp or on fettuccine made with this quick and easy Alfredo sauce. This is an extremely easy homemade alfredo sauce and this will become a weekly occurrence!

Alfredo sauce is a thick pasta sauce which is prepared using butter and parmesan cheese. Most American style Alfredo sauce also contains a fair amount of heavy cream and garlic which give the sauce a lot of the flavor of the Alfredo and make it even creamier. Freshly grated parmesan cheese; and NOT boiling the cheese, is the magic to a fabulous alfredo sauce.

Ingredients:

  • 1/2 cup overproof Sherry or Cabernet Sauvignon wine: To add richness to creamy Alfredo sauce
  • 2 cloves garlic, minced: To add garlic flavour
  • 4 cups heavy cream: For the “alfredo” sauce, in order to get a rich and creamy texture.
  • 1 1/2 cups parmesan cheese, freshly grated: For its salty, cheesy taste, added to the Alfredo sauce
  • 1/4 teaspoon salt: To add the flavours
  • 1/4 teaspoon black pepper: To add a little spice
  • 2 tablespoons of chopped, fresh parsley

Instructions

To prepare it:

  • Melt butter
  • Add the minced garlic. Cook until fragrant.
  • Add the cream.
  • Reduce heat and add in the cheese.
  • fry parmesan until lightly browned – toss in the freshly grated parmesan.
  • Mix until smooth
  • Add salt and pepper and toss.
  • Serve

  • Purchase Freshly Grated Parmesan Cheese: pre-shredded cheese will melt down more and additives added to it.
  • Be careful not to get too hot or Alfredo will curdle!
  • Gradual Addition of Cheese: Slowly add the cheese, this will help to provide a smooth Alfredo sauce.
  • Do Not Overcook the Sauce: The Alfredo sauce may become thicker as it cools, so make sure that it’s not too thick!
  • For Alfredo sauce, use Pasta Water, if it is too thick add some pasta water.
  • Serve Hot

There are some substitute ingredients.

Heavy Cream Substitute

There are several heavy cream substitutes you can use for Alfredo sauce including: Alfredo sauce, done half and half: won’t be as rich or thick as Alfredo sauce with heavy cream. Whole milk: May be used. A little more butter may be added.

Parmesan Cheese Substitute

Pecorino Romano is a good alternative to Parmesan. But it is more salty. So add less salt.

Butter Substitute

As far as alternatives to butter to make Alfredo you have two choices: Salted butter can be used in place of unsalted butter. Be sure to taste the salad dressing. Add salt if needed.

Fresh Garlic Substitute

If you don’t have any fresh garlic, you can use garlic powder as a substitute ingredient for Alfredo sauce

Alfredo sauce is a very thin sauce, and only takes a minute or two to cook – that is all. It also gets thicker as it cools. To really thicken it add a little extra freshly grated cheese. More cheese = More flavor – it’s always good!

Storing

It can be stored and refrigerated after cooling down. Reheat on a low heat. Add milk or cream if reheating. Don’t reheat it over a high heat.
